Atheists: Don’t you find it mind-shatteringly incredible how Hydrogen and Helium alone could do all this?

Yes, its VERY cool and amazing and there is lots to still learn. I just don't see the point of making up stories that lack evidence to explain things or read stuff into what we don't know yet. In fact, what stands out to me is so far, as cool as it is and mind blowing to think about, the explanations we do have and things we do understand are naturalistic and show no supernatural, sentient intervention.
